I feel this show should be on Food Network, not on the History Channel imo. But overall a really cool show.
Wish I could have been in the contest .. as a 3rd generation butcher , I would have love to demonstrate the skill of my knife to flesh and bone – this is a great show to educate those without the knowledge of meat from whole carcass to finish ready to cook cuts …for those who cannot stomach the show please leave,this is not for the weak , this is real life. Survival of the fittest ! No room for you prepackaged club card mangers special buying fragile lil hearts … meat!!!veggies!!! fruit!!! fish !!! Enjoy it all !!!

While I'm not enthusiastic about the game show format, I'm very much looking forward to seeing this series. I'm acquainted with one of the butchers (sort of) and of course hope this person wins. (I'm trying to phrase this so I don't give away who I'm rooting for) I've learned a LOT from this person, and have used the techniques to harvest 4 Hogs on our property this past year. Our animals only have ONE bad day – that is past so quickly that they never have an idea of fear or pain – and then I do my best to use every single part of the animal in one way or another. It's a matter of respect and gratitude for the animal's life to prepare, cook, and enjoy every possible part of it. The butcher I favor has done a lot to help me accomplish this!
