As you so correctly say, the simple answer to a fine poached egg, is to use fresh eggs. BUT, finding a fresh egg, is not so easy. In France, where I live, the supermarket is where most people can buy eggs. The carton will say 'Fresh Eggs', but the lay date is printed on the box, and it can be 10 DAYS previously. 'Best before' dates can be three weeks on! Ludicrous! So, folks reach to the back of the stack for the freshest boxes, and hope for younger eggs, and don't bring the whole stack down around your feet!! A hen's egg, straight from the nest, broken into barely boiling water will hold the shell shape. But, there are few of us who can be lucky enough to have that privilege.

Much easier way is to place eggs (any eggs, don't have to of purchased that day) into bowl then pore in boiling water, wait 1min then crack them open and drop them into pan with near boiling water the eggs will of congealed so perfect to drop into pan and job done simple and way easier
At least my dog doesn't mind the shape of his poached eggs
I feel like if you are truly looking for perfection, I suggest using a sous vide to poach them, the 5 star restaurant i worked at used this method.
